So I thought I would share the recipe here. It comes from this cookbook which I would highly recommend there are so many really good recipes for meals as well as baking. I use this cookbook all the time. The recipes have been sent in from ladies all over the States and Canada. I really like cookbooks by real cooks. Well you know what I mean - cooks like me not professional chefs. I find the recipes are always easy to understand, the ingredients are common and the end result has been tried and tested by these ladies families.
Here is the recipe....
Mom's Cookies
1 cup white sugar
1 cup brown sugar
1 cup shortening
3 eggs
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 cups quick oats
2 cups coconut
2 cups Rice Krispies
1/2 cup nuts (optional)
- Cream sugars and shortening. Stir in eggs and vanilla
- Stir together flour, baking soda, baking powder and salt . Add dry ingredients to creamed mixture, alternating with oats, coconut and Rice Krispies.
- Drop onto greased or parchment lined sheets.
-Bake at 375 degrees for 10-12 minutes.
