Cinnamon Swirl Loaf

This recipe is so easy but makes a really good and impressive looking coffee cake when you slice it and see the swirls which is perfect for gift giving. When ever I make it I am asked for the recipe.

I use this as a gift for new neighbors, thank yous, and add it to a meal for new babies or bereavement, really for anytime I need a little gift for someone. It is easy to wrap and decorate just to make it a little more special.

So Here is the Recipe...

Cinnamon Swirl Coffee Cake Loaf

2 cups flour

1 cup sugar

1 tsp. baking soda

1/2 tsp. salt

1 cup buttermilk ( I use 1 cup milk mixed with 1 tbsp. vinegar)

1 egg

1/4 cup oil

3 tsp. cinnamon

1/2 cup brown sugar

1 tsp. cocoa (this adds such a nice flavor and color to the swirl ~smile~)

In a large bowl combine flour, white sugar, baking soda and salt

Combine milk, egg and oil. Stir into dry ingredients.

In a small bowl combine cinnamon, brown sugar and cocoa.

Grease the bottom only of a loaf pan.

Pour half the batter into the pan, sprinkle with half the brown sugar mixture, then rest of the batter and rest of the brown sugar mixture.

Swirl with a knife.

Bake at 350 degrees for 45 - 50 minutes or until it tests done.

The cakes look especially pretty with a wide floral fabric ribbon over the brown paper and with raffia instead of jute.
